How can I modify the poll time from now min. 1 h to 5 minutes or 10 minutes?
15 minutes is the lowest you can go. Simply do it in Settings - pick the account - Fetching Mail. There you can pick the frequency, but anything under 15 min is blocked by Google or something, it’s been explained here before.

I can not really believe it but I know Google ist very restritive.
Why not expand with the function you can find in Thunderbird for Windows: Manually start a poll to start a download?

You can manually refresh “poll” new messages by “swiping down” in the message list.
If you use an Imap connection and need to poll more frequently than 15 minutes, you’re recommended to enable “Push” sync which delivers new emails immediately.
