Where do the account avatars come from? How can I set/change them?
They come from your contacts app. Create a contact with the same email address as the account and re-start K-9

Hello… while we’re on the subject… can you explain to me why the picture of the default account is displayed in the list but not in the headline? In an older post I also asked it, but “cketti” did not go into it.
