How to not send unencrypted message by accident?

How do I encrypt+sign by default and have the app prevent me from accidentally sending unencrypted message unless I disable encryption explicitly, for that particular message only? FairEmail can be configured this way. If I want to send a message to an address for which there is no public certificate, FairEmail can be made to either ask me to explicitly disable encryption (again, for that one message only) or give up on sending the message altogether. That’s a great safety guard.
